Ingredients:
For the pizza dough:
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 1/2 cups warm water (110°F)
- 3 1/2 to 4 cups all-purpose flour
- 2 tablespoons olive oil
- 2 teaspoons sugar
- 2 teaspoons salt
For the toppings:
- 1 cup cooked chicken, shredded or diced
- 1/2 cup BBQ sauce or pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese (optional)
- 1 small red onion, thinly sliced
- 1/2 cup sliced bell peppers (optional)
- 1/4 cup chopped fresh cilantro or parsley (optional)
Instructions:
Prepare the pizza dough:
- Activate the yeast: In a small bowl, dissolve the sugar in warm water, then sprinkle the yeast over the top. Let it sit for about 5 minutes until it becomes frothy.
- Make the dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
- Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, add more flour a little at a time.
- Let the dough rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
Assemble the pizza:
- Preheat the oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.
- Prepare the dough: Punch down the risen dough and transfer it to a floured surface. Roll out the dough to your desired thickness and shape, then transfer it to a pizza peel or a baking sheet lined with parchment paper.
- Add the sauce: Spread the BBQ sauce or pizza sauce evenly over the pizza dough, leaving a small border for the crust.
- Add the toppings: Sprinkle the shredded chicken evenly over the sauce. Add the red onion slices and bell peppers if using. Top with shredded mozzarella and cheddar cheese.
- Bake the pizza: Carefully transfer the pizza to the preheated oven or pizza stone. Bake for about 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Garnish and serve: Remove the pizza from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro or parsley if desired. Slice and serve hot.
